Walnut’s native environment is the central Asian mountains but the fruit is popular in the Mediterranean countries since the dawn of history. Its Latin name, Juglans regia, means Jove’s acorn, and the walnut, a nut fit for a god, was very popular among the Greeks and the Romans. The walnut has always been a precious and energetic fruit thanks to its heart-healthy unsaturated fat and digestible proteins. A healthy fruit. The walnut holds a very important place in theMediterranean diet and recent studies are showing its nutritional benefits: walnuts can reduce cholesterol and blood pressure. The fruit is an excellent source of those hard to find omega-3 fatty acids that improve a wide variety of cardiovascular functions. How to store walnuts. Walnuts should be stored in a cool and dry place. If they will be stored for a longer period, or if the summer season is approaching, they need to be stored in the freezer (it won’t lessen their quality even after few cycle of freezing and defrosting). Why biological walnut? Lara walnuts from the Valier Farm are washed exclusively with drinking water. Farms that bleach their walnuts do so for aesthetical reasons, but it’s not a healthy choice because current methods of bleaching might result in toxic residues and effluents inside the fruit. Lara walnuts’s features. Lara walnuts have a more delicate taste and contain less fats than other varieties. It’s typical for these kind of walnuts to have some space between the kernel and its shell so that the kernel has freedom to move inside the shell. This is why when you open the walnut it might appear of a different color. What does the different size means? The walnut is handpicked when still green, brine, and then cut in half to be packed in extra virgin olive oil. The green walnut, when still tender, has a strong flavor softened by the olive oil.
