The walnuts are harvested when still green and preserved first in brine and then in vinegar. They are later cut in quarters and packaged in extra virgin olive oil. The result is a soft fruit with a strong aroma weakened by the dry aging with salt. Best used while cooking meat, either white meat as chicken and turkey or red meat.
